Recipe: Baked Oats






Over the Autumn and Winter months, I started looking for breakfasts ideas that were warm, filling and wouldn't take too much effort to make (ie, would allow for longer time in bed)!

Enter baked oats.

I first saw the idea behind these on Instagram, and my blueberry version of them is probably as close to a blueberry muffin as I'll be able to get.







Ingredients:
40g oats
1 egg
1 muller light yogurt (my preference is the toffee flavour, but any will do)
1 / 2 tsp vanilla extract
50g blueberries (or whichever fruit you prefer - I've tried it with raspberries as well, and it turned out just as nice!)


Method:
Mix the oats, muller light and vanilla extract together, and leave overnight to allow oats to soften.
Add egg to mixture and mix well. Add in 50g of blueberries, or whichever fruit you would prefer. If you're following the Slimming World plan as I am, just be aware that the fruit will be cooked in the mixture and will have to be synned accordingly.
Using frylight, spray an oven proof dish, and add mixture to dish. Cook for about 30 minutes at 180°, or until top is lightly browned.






I normally top mine with a yogurt and extra fruit to bulk it out, but it does taste just gorgeous on its own!
