What I've Been Up To: Week #5


What a week! Obviously, this post is going up a day or so later than I'd like to have had it up, but with the busy weekend we've just had, there was no way I was going to have it up on the Sunday!


I knew starting off the week that it was going to be a manic one as we were heading off early on the Friday morning on our little break away to Amsterdam.


Work wise, I spent most of the week trying to stay on top of everything as I knew I'd be out on the Friday, but with badminton matches in the evening as well, running three times a week, and getting rooms prepared for renovating, it felt a little bit like I was burning the candle at both ends this week.
Picked up some bright flowers to keep me going, I feel like there's something so spring time about daffodils, and they're such a cheap and easy way to bring a bit of colour in to our darker rooms.

Spotted this beauty in Lidl during the week, and had to have it - I've been using my porridge oats to make pancakes and baked oats quite regularly, and I just wanted to have something else if needed. I used the same recipe that I used for the pancakes, and the baked oats and they turned out lovely - I'm sure I'll be experimenting with it over the next while, trying out different flavours, but for now blueberry waffles went down a treat!





We had a taster night in our Slimming World group on the Wednesday. I love when taster is on as I normally try a new recipe that I haven't made before, as that way there's not much waste with lots of people trying it. If I trial something at home, there's only two of us to eat it - which in the case of the brownies recently was more than doable, but doesn't always work out that way!
I decided to keep it simple, and went with a simple chocolate orange sauce on meringue nests with fresh fruit. They seemed to go down ok as I came home with an empty tray. I always judge how they go on how much I'm bringing home with me afterwards.



I also had a major victory in my couch to 5k journey - I managed to run 3 km without stopping on the Wednesday evening. This mightn't seem like a lot to some people, and I'm sure others would laugh at the length of time that this took me, but considering that over a year ago, I would have struggled with half a kilometer at a time, this is a huge deal for me to have managed. I have a 5km race coming up in the next few months, and I'm hoping to run it all without stopping. Going to keep this momentum up!




This week became a mini pamper week, completely by accident. I had planned to get my hair trimmed before we headed off, as it was in dire need to it, but I noticed that my nails also needed some TLC. I booked in, and with a huge range of colours to choose from, I settled on on a dusky rose pink. I've got a hen party to go to in two weeks time, so I'm hoping they won't grow too much between now and then.

And, the highlight of the week - our trip to Amsterdam! I have a whole post almost ready to go about the break away, so I won't go into too much detail on this post, as there's no point in repeating myself later on! Here's a little teaser of what's to come later on during the week though!





 As much as it was an action packed week, it's good to be getting back into a routine at the moment - especially as we're still in the middle of spring term in work.
Hoping to try out a new recipe or two this coming week, and of course, we're finally getting our sitting room and back kitchen / pantry insulated and plastered - too exciting!
